Potato Helps 


1.  Parboil quartered red potatoes for 5 minutes prior to roasting in the over for tender insides with attractive crisp-brown tops.

2.  Quick baked red potatoes: rinse with cold water, pierce in a  couple of locations with a fork and microwave for about 4 minutes.

3.  Healthy, fluffy red-skinned mashed potatoes: use a bit of low-sodium broth and low-fat sour cream instead of butter and milk.
